Wow brother hopefully the deer tasted good, Got some Venision deer Hauch/Haunch steaks myself from a proper local Butcher haven't made it yet saving it as a Victory meal Once I get the BIG Load sorted and Major Butthurt problems out the Way, I'm sure it will be well deserve and delicious when I do make it.

What is the kind of plant that the head of the deer is behind?

It sort of looks like some kind of Eucalyptus Leaves, both dead and alive leaves, but it also looks like a vine... kind of... The Merkins had imported a heap of Eucalyptus into the US and A, but without the Australian species that chew up the leaves and wood, the US trees grow like HUGE and highly highly dangerous trees in a bush fire - like giant christmas trees with HUGE amounts of foliage from the ground to the crown... Here they get chewed up into gnarly looking things... So not sure what plant it is, how is has grown or if the INTRODUCED species that feed on it, have actually reached this plant, hence the vine like growth.
