The spring steels are GOOD workable steels - I should know - I designed them for formula one racing motorbikes, AND I used to manually reset the springs that locomotives (trains) and rolling stock used to ride upon..... You heat them up inside a giant furnace, above their yield point - a solid dark orange colour , spread the coils with tongs, put them back in to reheat, quench them in oil, then they are TOO hard, then you anneal them in another oven at 400*C then let them air cool... and they are the right temper - strength and hardness.... AND truck leaf springs have similar properties, they are TOUGH - and can be heat treated to make a very hard edge.... Provided that your chopping up bones and carcass's, and on a wooden chopping block....

Yeah in countries where a lot of the butchering is done completely by hand, the heavy meat cleavers are big sellers..... They are for cutting through spines, ribs, leg bones etc..
