Restaurant owner floods it with clean water to protect it from dirty flood water

Living in the flood plains.... this is a good idea.

Mud and the crap in it like motor oils, shit from the sewerage farm, dead things etc., and health regulations etc., is a HUGE job to clean out... The issue here is "it's going to get wet" anway - so flooding it with CLEAN disinfected tap water, keeps the muddy shitty water out.... and as long as at least ONE tap is running hard, the water will be slightly higher than the flood water, and the clean water will be pushing back against the dirty water.... and as the flood water recedes etc., when it's all gone, all he has to do is air dry the place.... It's fucking brilliant.
