My dad was a fisherman.. stonecrab, and mullet to bait the traps.. well, we smoked mullet.. for hours like over a day.. day and a half? and it preserves the fish.. and it was good.. I've smoked whole top sirloins.. or Brisket.. to get good roast beef.. 14 hours on brisket.. 1/2 smoked and half wrapped in foil in oven.. do the same with ribs but almost 5 hours.. can put sauce on meat when wrapped in foil.. comes out moist.. I mostly just taught myself barbecue.. and have been on a diet for like 2 years .. lol..
