I've made various chilis, with and without beef, but with beans (usually pinto, light or dark kidney, or black beans, either separate or altogether, are my favorites). My favorite chili is a mixture of beef and bison (both grass fed, of course, but I've also used elk, reindeer [from Alaska years ago] and venison. All are good). I've also used turkey and/or chicken, which is called "white chili". Of course, it has a different flavor to it. I like to add veggies (peppers, tomatoes, mushrooms etc) to my chili, making it more of a balanced meal, but I don't use water.

Cooking is sort of far more interesting than most things, because there are so many small and incremental changes and variations, unlike Timothy Leary's LSD - cooking is truly mind expanding..... once of zillions of things actually.... AND really decent, nutritional and filling cooking - fantastic. It's like with hot chillie sauces...I have come to the conclusiont the the best stuff is NUTRITIONAL, TASTY and wayyyyyyy too fucking hot - because then you can use a LOT LESS.... instead of pouring half the small bottle on, just to get the heat happening....
