I don't know Amr: I have not been able to get your two baklava update videos to play. Never-ending spirals of doom every never.
This has sizings on baking trays - you SHOULD be able to match your tray sizes to the Filo Pastry sheets - only slightly larger, and depth to the baklava thickness....
Makes it easy on the in tray assembly.

The shallow 3 sided flat trays, are good for the ease of assembling the baklavas on, and being low profile in the oven and for getting them off the tray.....
AND you can combine a wooden side wall pattern, to contain the baklavas in - as you assemble them and cut them - prior to baking.....
I can either send you a pattern on how to make one out of wood = very easy.... and like $5 to make..
Think in terms of not making a few trays a day... I am talking about making 10 - 20 - 30 or 50 trays a day - and very easily.....
Then we have the soaking in honey, and then the packaging...
What brand and size of filo pastry sheets are you using AND are the same sizes available in Europe / Ukraine etc?
