Rabelle is one of the most drop dead gorgeous boats I have ever seen. She has a Kitchen Rudder and this video shows just how good this can be. If the clamshells are hydraulicly actuated using electrohydraulic control the control could be by simple joystick.
This would take away from the pleasure of a wheel though. With the technology of today we have many options.
